  • Preparation:
  1. Place each veal cutlet between two sheets of plastic wrap and pound them with a meat mallet or rolling pin until they are about 1/4 inch thick.
  2. Season the cutlets with salt and pepper.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  4. Dredge each cutlet in flour, shaking off any excess. Dip them into the beaten eggs, then coat them with breadcrumbs, pressing gently to adhere.
  5. Heat vegetable oil in a large pan over medium-high heat. Fry the cutlets, in batches if necessary, for about 2-3 minutes per side, or until golden brown and cooked through.
  6. Remove the cutlets from the pan and drain them on paper towels.
  7. Serve the Wiener Schnitzel hot, with lemon wedges, and potato salad or lingonberry jam on the side.
