  • Ingredients:

For the dough:

For the filling:

Red bell pepper1, chopped
Green olives1/2 cup, chopped
Raisins1/4 cup
Hard-boiled eggs2, chopped
Cumin1 tsp
Paprika1 tsp

Olive oil2 tbsp
  • Preparation:
  1. In a large bowl, combine the flour and salt. Add the diced butter and rub it into the flour mixture with your fingers until it resembles coarse crumbs.
  2. Gradually add the water, mixing with a fork, until the dough comes together. Knead the dough gently on a floured surface until smooth. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper and cook until softened.
  4. Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through.
  5. Stir in the cumin, paprika, salt, and pepper. Add the chopped olives, raisins, and chopped hard-boiled eggs. Remove from heat and let the filling cool.
  6. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  7. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut out circles using a round cutter or glass.
  8. Place a spoonful of the filling in the center of each dough circle. Fold the dough over the filling and crimp the edges with a fork to seal.
  9. Place the empanadas on the prepared baking sheet. Brush the tops with the beaten egg.
  10. Bake the empanadas for about 20 minutes, or until golden brown and crispy.
  11. Serve the empanadas hot, with salsa or chimichurri sauce on the side.
