Potatoes | 500g, peeled and cubed |
Carrots | 2, sliced |

- Preparation:
- In a large pot, heat some oil over medium-high heat. Add the onions and cook until softened.
- Add the garlic, red bell pepper, and tomato paste. Cook for another 2-3 minutes.
- Add the cubed beef to the pot and brown on all sides.
- Stir in the paprika and caraway seeds, then add the beef broth, potatoes, carrots, and bay leaf.
- Season with salt and pepper, then bring to a simmer.
- Cover and cook for about 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.
- Remove the bay leaf before serving.
- Serve the goulash hot, topped with a dollop of sour cream and chopped parsley.
