  • Preparation:
  1. In a large pot, heat some oil over medium-high heat. Add the onions and cook until softened.
  2. Add the garlic, red bell pepper, and tomato paste. Cook for another 2-3 minutes.
  3. Add the cubed beef to the pot and brown on all sides.
  4. Stir in the paprika and caraway seeds, then add the beef broth, potatoes, carrots, and bay leaf.
  5. Season with salt and pepper, then bring to a simmer.
  6. Cover and cook for about 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.
  7. Remove the bay leaf before serving.
  8. Serve the goulash hot, topped with a dollop of sour cream and chopped parsley.
