Spring onions | 2, chopped |
Eggs | 2 |
Peanuts | 50g, crushed |
Vegetable oil | 2 tbsp |
Fish sauce | 3 tbsp |
Soy sauce | 2 tbsp |
Tamarind paste | 2 tbsp |
Sugar | 1 tbsp |
Lime | 1, cut into wedges |
Fresh coriander | For garnish |
Salt | To taste |
Pepper | To taste |
- Preparation:
- Soak the rice noodles in warm water for 30 minutes, then drain and set aside.
- In a bowl, mix the fish sauce, soy sauce, tamarind paste, and sugar to make the sauce. Set aside.
- Heat a wok or large pan over high heat and add vegetable oil. Add minced garlic and chopped red chili, and stir-fry for a few seconds.
- Add shrimp, chicken, and tofu to the wok. Stir-fry until the shrimp is pink and the chicken is cooked through.
- Push the ingredients to one side of the wok and crack the eggs into the empty space. Scramble the eggs until set, then mix them with the other ingredients.
- Add the drained noodles to the wok along with the prepared sauce. Toss everything together until well combined.
- Add bean sprouts and chopped spring onions to the wok. Stir-fry for another minute.
- Serve the Pad Thai hot, garnished with crushed peanuts, fresh coriander, and lime wedges.
