Chicken breast150g, thinly sliced
Firm tofu200g, cubed
Garlic cloves2, minced
Red chili1, chopped
Bean sprouts100g
Spring onions2, chopped

Peanuts50g, crushed
Vegetable oil2 tbsp
Fish sauce3 tbsp
Soy sauce2 tbsp
Tamarind paste2 tbsp
Sugar1 tbsp
Lime1, cut into wedges
Fresh corianderFor garnish

  • Preparation:
  1. Soak the rice noodles in warm water for 30 minutes, then drain and set aside.
  2. In a bowl, mix the fish sauce, soy sauce, tamarind paste, and sugar to make the sauce. Set aside.
  3. Heat a wok or large pan over high heat and add vegetable oil. Add minced garlic and chopped red chili, and stir-fry for a few seconds.
  4. Add shrimp, chicken, and tofu to the wok. Stir-fry until the shrimp is pink and the chicken is cooked through.
  5. Push the ingredients to one side of the wok and crack the eggs into the empty space. Scramble the eggs until set, then mix them with the other ingredients.
  6. Add the drained noodles to the wok along with the prepared sauce. Toss everything together until well combined.
  7. Add bean sprouts and chopped spring onions to the wok. Stir-fry for another minute.
  8. Serve the Pad Thai hot, garnished with crushed peanuts, fresh coriander, and lime wedges.
