Chicken broth4 cups
White wine1/2 cup
Saffron threads1 tsp
Paprika1 tsp
Olive oil3 tbsp

  • Preparation:
  1. Heat olive oil in a large paella pan or skillet over medium-high heat. Add chicken and chorizo and cook until browned. Remove and set aside.
  2. In the same pan, add onion, garlic, and bell pepper. Cook until softened.
  3. Add rice, paprika, saffron, and tomato to the pan. Stir to coat the rice with the spices.
  4. Pour in the chicken broth and white wine. Bring to a simmer and cook for about 10 minutes.
  5. Add the chicken, chorizo, prawns, mussels, and green peas to the pan. Stir to combine.
  6. Cover the pan with a lid or foil and cook for another 10-15 minutes, or until the rice is tender and the seafood is cooked through.
  7. Remove from heat and let it rest for a few minutes. Serve hot with lemon wedges.
