- Preparation:
- Clean the duck thoroughly, removing any innards and excess fat. Pat dry with paper towels.
- Mix honey, soy sauce, Chinese five-spice powder, and salt in a bowl to make the marinade.
- Brush the marinade over the duck, ensuring it is well coated. Let it marinate in the refrigerator for at least 4 hours or overnight.
- Preheat the oven to 180°C (350°F). Place the duck on a rack in a roasting pan.
- Roast the duck in the preheated oven for about 2 hours, or until the skin is crispy and the meat is tender. Turn the duck occasionally and baste with the marinade.
- Remove the duck from the oven and let it rest for a few minutes before carving.
- To serve, thinly slice the duck meat and skin. Serve with hoisin sauce, spring onions, cucumber, and pancakes.
