  • Preparation:
  1. Clean the duck thoroughly, removing any innards and excess fat. Pat dry with paper towels.
  2. Mix honey, soy sauce, Chinese five-spice powder, and salt in a bowl to make the marinade.
  3. Brush the marinade over the duck, ensuring it is well coated. Let it marinate in the refrigerator for at least 4 hours or overnight.
  4. Preheat the oven to 180°C (350°F). Place the duck on a rack in a roasting pan.
  5. Roast the duck in the preheated oven for about 2 hours, or until the skin is crispy and the meat is tender. Turn the duck occasionally and baste with the marinade.
  6. Remove the duck from the oven and let it rest for a few minutes before carving.
  7. To serve, thinly slice the duck meat and skin. Serve with hoisin sauce, spring onions, cucumber, and pancakes.
