  • Ingredients:

For the gravy:
Butter2 tbsp
Flour2 tbsp
Beef or chicken broth2 cups
Worcestershire sauce1 tbsp

  • Preparation:
  1. Peel the potatoes and cut them into French fry shapes. Rinse them under cold water to remove excess starch.
  2. Heat oil in a deep fryer or large pot to 180°C (350°F). Fry the potatoes in batches until they are golden brown and crispy. Drain on paper towels and season with salt.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux, and cook for 1-2 minutes.
  4. Gradually whisk in the broth, making sure there are no lumps. Cook the gravy until it thickens, about 5-10 minutes. Stir in the Worcestershire sauce and season with salt and pepper.
  5. To assemble the poutine, place a layer of French fries on a plate. Sprinkle cheese curds over the fries, then ladle gravy over the top.
  6. Serve the poutine hot, allowing the cheese curds to melt slightly from the heat of the gravy.
