  • Ingredients:

For the dough:

  • Preparation:
  1. In a large bowl, combine the flour and salt. In a separate bowl, whisk together the egg, sour cream, and water.
  2. Gradually add the wet ingredients to the flour mixture, stirring until a dough forms. Knead the dough on a floured surface until smooth.
  3. Cover the dough and let it rest for about 30 minutes.
  4. Meanwhile, boil the potatoes until tender. Drain and mash them with the butter, onion, cheddar cheese, salt, and pepper.
  5. Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles using a cookie cutter or glass.
  6. Place a spoonful of the potato filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal.
  7. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove them with a slotted spoon and drain.
  8. Serve the pierogi hot, with sour cream, butter, and fried onions.
