| Red bell pepper | 1, diced |
| Green peas | 1/2 cup |
| Tomato | 1, diced |
| Chicken broth | 4 cups |
| White wine | 1/2 cup |
| Saffron threads | 1 tsp |
| Paprika | 1 tsp |
| Olive oil | 3 tbsp |
| Salt | To taste |
| Pepper | To taste |
| Lemon wedges | For serving |
- Preparation:
- Heat olive oil in a large paella pan or skillet over medium-high heat. Add chicken and chorizo and cook until browned. Remove and set aside.
- In the same pan, add onion, garlic, and bell pepper. Cook until softened.
- Add rice, paprika, saffron, and tomato to the pan. Stir to coat the rice with the spices.
- Pour in the chicken broth and white wine. Bring to a simmer and cook for about 10 minutes.
- Add the chicken, chorizo, prawns, mussels, and green peas to the pan. Stir to combine.
- Cover the pan with a lid or foil and cook for another 10-15 minutes, or until the rice is tender and the seafood is cooked through.
- Remove from heat and let it rest for a few minutes. Serve hot with lemon wedges.
