For the noodles:

Oyster sauce2 tbsp
Hoisin sauce2 tbsp
Sesame oil1 tbsp

Cornstarch1 tsp

For the stir-fry:

Onion1, sliced
Bell pepper1, sliced
Carrots2, julienned
Garlic cloves2, minced
Ginger1 tsp, minced
Vegetable oil2 tbsp

  • Preparation:
  1. Cook the chow mein noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, cornstarch, and water to make the sauce. Set aside.
  3. Heat the vegetable oil in a large pan or wok over high heat. Add the sliced chicken and cook until browned and cooked through. Remove from the pan and set aside.
  4. In the same pan, add the onion, bell pepper, carrots, garlic, and ginger. Stir-fry for a few minutes, or until the vegetables are tender-crisp.
  5. Add the cooked chicken back to the pan, along with the cooked noodles and the sauce. Stir-fry everything together until well combined and heated through.
  6. Serve the chow mein hot, garnished with sliced green onions.
