- Preparation:
- In a bowl, whisk together the lime juice, olive oil, minced garlic, chili powder, cumin, paprika, salt, and pepper to make the marinade.
- Place the sliced meat in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 1 hour, or overnight.
- Heat a grill or grill pan over medium-high heat. Grill the marinated meat for about 3-4 minutes per side, or until cooked to your liking. Remove from heat and let it rest for a few minutes before slicing thinly.
- In a separate pan, sauté the sliced bell peppers and onion until softened and slightly caramelized.
- Warm the flour tortillas on the grill or in the oven.
- To assemble the fajitas, place some sliced meat and sautéed vegetables in the center of each tortilla. Add toppings as desired and fold the tortilla over the filling.
- Serve the fajitas hot, with additional toppings on the side.
