- Ingredients:

| Potatoes | 4 large | 
| Cheese curds | 200g | 
| For the gravy: | |
| Butter | 2 tbsp | 
| Flour | 2 tbsp | 
| Beef or chicken broth | 2 cups | 
| Worcestershire sauce | 1 tbsp | 
| Salt | To taste | 
| Pepper | To taste | 
- Preparation:
- Peel the potatoes and cut them into French fry shapes. Rinse them under cold water to remove excess starch.
- Heat oil in a deep fryer or large pot to 180°C (350°F). Fry the potatoes in batches until they are golden brown and crispy. Drain on paper towels and season with salt.
- In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux, and cook for 1-2 minutes.
- Gradually whisk in the broth, making sure there are no lumps. Cook the gravy until it thickens, about 5-10 minutes. Stir in the Worcestershire sauce and season with salt and pepper.
- To assemble the poutine, place a layer of French fries on a plate. Sprinkle cheese curds over the fries, then ladle gravy over the top.
- Serve the poutine hot, allowing the cheese curds to melt slightly from the heat of the gravy.
